(Fancy) Creamy Dreamy Tomato Soup
It's a very good recipe for snacks, & it's SUPER - DUPER EASY!

This recipe is pulled from a cookbook for kids - America's Test Kitchen's The Complete Cookbook for Young Chefs. We love that it's so easy and delicious. As an added bonus, it can be made vegan/vegetarian if you use vegetable rather than chicken broth (we did) and it is always dairy-free.
Serves 1-2 (or 3 itsy bitsy teensy weensy portions)
Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons chopped shallot
- 1 garlic clove, peeled and minced
- 1 (14.5 oz) can of diced tomatoes
- 1/2 cup of vegetable or chicken broth
- 1 slice of hearty white sandwich bread (or part of a baguette), torn into 1-inch pieces
- 1 teaspoon of packed brown sugar
Equipment
- Large saucepan
- Cutting board
- Chef's knife (optional - for smashing garlic cloves)
- Large cooking spoon
- Measuring spoons
- Measuring cups
- Blender
Directions
- In a large saucepan, heat oil over medium-low for 1 minute. Add the chopped shallot and garlic and stir with a wooden spoon until soft and lightly browned. This should take about 3 minutes.
- Pour the tomatoes and their juice into the saucepan.
- Stir in the broth, bread, and sugar. Raise the heat to medium-high and bring to a boil.
- Reduce heat to medium and cook, stirring occasionally until the bread starts to fall apart. This takes about 5 minutes.
- Turn off the heat and move the saucepan to a cool burner. Let the mixture cool for 5 minutes.
- Carefully transfer the mixture to a blender (it's hot, so get help from an adult!)
- Put the lid on the blender and hold it in place with a folded dish towel. Blend until smooth. This should take 1-2 minutes.
- Pour into bowls or mugs and serve! YUM!!!!
Vesper's Tiny Chef Tips
- Tip #1: To conserve the brown sugar, it's good to put a piece of bread in with the brown sugar (I know it sounds wacko, but it works!)
- Tip #2: Be super careful with measurements, cause on this one I almost mixed up a clove with a head of garlic! 😕😂
